It takes a while for you to die if the bite isn't deep or you are scratched I believe. We had a situation like that back during season 1 at the camp were one of the guys was hurt and lasted a few hours before dying. He was likely about to shot himself before he was knocked out and that was why he was crying.

Bob wasn't bitten guys. TWD writers were trying to do something a little smarter but it fell on deaf ears I think. Or maybe it wasn't communicated correctly.

Bob is staying in high spirits all the time keeping Sasha happy. On the outside he's trying to keep everyone happy but on the inside he feels hopeless.

Or maybe I'm completely wrong but that'd be a cool character arc.

Carol did exist. She let herself be eaten by a walker in prison after failing to be the third in a relationship. And Daryl was introduced awhile back I think?
