Typically they will go on sale around the time the review embargo ends.
You shouldn't need to worry too much, CPU launches are nowhere near as chaotic as GPU/console launches are.

Ordered a am5 board and ddr5, gonna get to Microcenter about 30 minutes before they open Thursday. Shouldn't have any issues getting one right?

Usually reviews are published at 14:00 GMT, because of NDAs.
I don't know if this also limits when retailers can put these CPUs on sale.

Even if both have 3D v cache, if a program uses cores on both ccd it still incurs a latency penalty. The 8 core is just the way to go unless you have a real productivity need for the extra core imo.
Hopefully with zen 6 we can get 10 cores per ccd or something.
