Already had Wolf Link.
8bit Link and OOT Link from Target for their classic outfits.
Smash Link from the Nintendo Store for his classic outfit.
Smash Zelda from TRU for the Twilight Bow.
Don't care about the Toon Link costume. I love WW but it's the least cool looking classic armor. Also don't care about the exclusive weapons because they'll break and I want to main the Master Sword anyway. The Twilight Bow is an exclusion, though, because of the infinite ammo and shooting in a straight line.

So I haven't bought BotW yet but it's my understanding that all weapons break in the game? Is there anyway to fix them? Do these amiibo weapons break too?

All weapons break, including amiibo weapons. No way to repair them. However, you can just rescan the amiibo to get another one to drop. If it doesn't drop the first time you scan, reload your save and try again. Armor does not break. Amiibo armor cannot be dyed, though.

Do Tunics in this game have Armor Ratings or Stats? Or are they just glamour? And if they DO have stats would I be missing out slot on Defense if I stick with an amiibo outfit instead of wearing the possible BiS Outfit set provide by the game?

They have good baseline stats and can be upgraded, so really no reason not to wear a classic outfit if you like how it looks.
That said, BiS is BiS and none of these armor pieces are going to be BiS. Some of the weapons, maybe, like the Twilight Bow.

To GAF's mind, what amiibo drops are best? I was thinking of picking up wolf amiibo, but I don't have TWP save and was concerned about three heart pet wouldn't survive long. I was then thinking princess zelda but you can get the shield later in the game. Then I thought about the Guardian (ancient arrows) but then I figured I'd just ask the experts at GAF.

I don't think that's the case. Nobody has been able to confirm that you can get the exclusive amiibo unlocks - like all the Green Hero's Tunics, weapons and Epona - by any other means than by using the corresponding amiibo.
You also get parts of the original LOZ Hero's Tunic and the Magical Sword.

Sure if you don't mind the spoilers (all side quest related):
Once you do the side quest in Akkala to find Kilton at Skull Lake (pick this up from the stable northeast of Lake Akkala from a guard there), Kilton will open his "Fang and Bone" shop and start wandering around selling monster gear. He adds new items to his stock over time as you sell him more monster parts in exchange for his made up "Mon" currency. Eventually he will offer all three pieces of the Dark Link set from OoT for a lot of Mon.

There's a guy named Kilton on the left eye of skull lake in the Akkala region. Speak to him there and he begins showing up on the outskirts of main villages from 8:00pm-400am. He deals in monster parts and has his own currency called mon. You sell things to him to get mon and then buy things (Like the aforementioned Dark link costume). It's sold in separate pieces however. I belive the total you'd need is 3997 Mon.

So....is the wolf companion exclusive to the WolfLink amiibo, or is it attainable in the vanilla game like all the other amiibo unlocks?
It is tied to the amiibo like some exclusive armor and exclusive weapons are tied to LoZ amiibo's.
A lot of the old figures give weapons or armor you can't unlock without them, sad to say.

It depends! I've gotten some exclusive armor relatively easily, but Ganondorf's and Zelda's exclusives are nowhere to be found. Also, you can use an amiibo and reload a past save to scan it again. Even with this, I haven't found their exclusives yet
