Dark Souls 3 has to be my favorite due to the overall world design, boss fights, and combat. I am a fan of all the games. I'd say its a must play if you're a fan of the franchise. I would not skip it. I didn't necessarily praise the games or even King's Field for its non-clunkiness. It was fun, entertaining because it was challenging. What From Software developed worked and it worked well enough to take you from the beginning to the end. Its strange how a genre can be so defining, but it still gets dismissed for reasons that didn't exist. There's a new world to explore and its one that helped make the franchise so recognizable. The Remaster is there for obvious reasons, so don't kick yourself too hard if it isn't exactly like Dark Souls 3. There wouldn't have been a Dark Souls 3 hadn't the first game had its impact. There are some very memorable moments in the first game. You have boss fights that still get brought up to this day. I played each game at launch, so the play pattern has been right in line with the franchises timeline. I also did some replays of each game since then. I don't necessarily think dismissing it for modern day criticism is the right thing to do. To each their own.
