I mean, art is subjective so I disagree. I've always found the direction of Twilight Princess to be the least inspired and this seems closest to that. You get to the point of realism that the character designs for Zelda need to be rethought or they look monstrous (twighlight princess).This isn't even that good by today's standards but still look much better artistically compared to recent Zelda games
For when this came out Skyward Sword was the next release and I much prefer the artistic direction of that game with the overly expressive facial features and painterly/water color world. They really landed in a comfortable place with the current cel shaded look. Not that the current style couldn't also be improved on with stronger hardware. Improved draw distance, more detailed textures, better particle effects would still fit int hat style.
This tech demo is kinda funny though. It's pre rendered and they blew everything up to 10 for the lighting/water/reflections where it just looks silly.
