Frankly I don't know how you de-canonize them. You'd still have these films that say Episode VII-IX in the titles, that has Mark, Carrie and Harrison in them. Like how do you get the message out to the average person "Hey just ignore these, they don't count"? I feel that ejecting them from canon would be something for the fans, not casual audiences as a whole.
Also, while I would like to see those films removed from the lore, that doesn't solve the fundamental problem with Star Wars right now, which is mediocre storytellers and filmmakers helming these projects. Star Wars used to be the brainchild of George Lucas. Now multiple people are sticking their fingers in the pie. We're talking about an IP that delivered The Acolyte and Andor roughly around the same timeframe, and these two shows couldn't be farther from each other in terms of quality and style.
Personally what I would do is split the IP up into two timelines. Legends and whatever you want to call the canon timeline, but don't call it canon. Establish that both timelines are valid. Next is I would cancel all tv and movie projects, and pool all resources together to deliver one big premium show. Something akin to Game of Thrones. Just a big epic told across multiple seasons, that switches between POV characters like a young Jedi hero, a Sith spy, Republic commando, a Senator on Coruscant, a Smuggler, etc. Make the tone similar to Andor. It could be during the Old Republic, or a thousand years after the Skywalker Saga. But get a talented team of show runners, writers, and directors to make it.
Meanwhile hand out book, comic, and video game projects to other people. Let them pick whatever timeline they wish, but I got a feeling the Legends timeline would be the more popular one.
