That underground processing plant didn't do it for you in the giraffe layer? That brought me back to Donkey Kong Country's mines and factories, that's when the mechanics and world really started to win me over.
Not really, because the point is, you're doing the same things in every level. The environment doesn't offer challenges specific to its unique features. The mines and factories didn't really shake up the gameplay in any way (cart riding is limited to a couple of instances, like the boss).
In a Mario game, like Odyssey, there's some things you can do only in a specific level, ie, you're in a lake, you can transform into a fish and explore underwater. Or in Mario 3D World, you can skate on the ice in the snow levels, something you can't do on any other ground. DK instead does the same things regardless of the environment. I understand there's animal friends (I'm about to get the zebra in the snow layer), I hope those add some variety to the gameplay.

What they did with the bananas is interesting. There are so many, and you can easily stumble upon one while looking for something else. So you don't just pick up one by touching it: you have to hit it three times, even the bananas you get from beating bosses. This way you can always choose how many, and which ones, you want to collect. Still, I'm not sure what purpose this serves. You can always choose to not spend the skill points you get from bananas, so why would you not pick them up in the first place?
