Crimson Skies: Echoes through Time as the surprise Xbox 360 showpiece.

In the terms of "actually been announced as showing," as long as EAD (or whoever is developing it) doesn't get daft with the gimmicks and makes it pretty, the new Mario game will light gamer and press eyes up with all sorts of retro potential. I think they're going to be a little disenchanted with Zelda once they've played it for a while, but will still praise it heavily.

Even if you weren't, a remake of ZAMN in any way, shape, or form would be frickin' amazing as hell anyway.

Why hasn't it ever been done? Bad sales? The game was fantastic, early co-op and everything.

The hottest playable title will no doubt be Zelda with nearly every journalist pouncing on the first chance to write up a story about it. Following that if Nintendo shows a new Mario title running on Revolution then that will also create a lot of positive stir. PD0 on XB360 will also dominate headlines as will the next GoW title for PS3 (wishful thinking).

Barring any game play disappointments the game of the show award will probably go to Zelda otherwise if Spore is remotely playable then I would give a nod to that.

My guess would be Zelda for Nintendo, Final Fantasy XII for PS2, and as others have mentioned - the most graphically beautiful Xbox360 game shown. Zelda will likely be the game of the show though in my opinion, I'd love for something we never expected to steal it's thunder though. I mean, Nintendo COULD show another useless trailer and people would be all over the game's nuts, so if it's going to be game of the show, they better have playable demos showing how different this game is from it's past installments.
