I still feel bad I haven't gotten around to watching Baccano, had a friend give it to us a while back. Right now we're watching Gintama, but I wouldn't consider that too friendly to someone new to anime really.
I tried but couldn't. The show hops around too much to the point it doesn't finish scenes. Annoying >_<

I've watched Cowboy Bebop and Dragon Ball Z to completion. I also think Champloo, but I don't care for it much.
Bebop is one of my favorite things ever, though.

Speaking of Vash the Stampede, I might throw out Gungrave as an anime to be aware of which is written by the same author as Trigun. Aside from the heavy gunplay they aren't really alike, I just thought Gungrave was great. I will say that you should skip the 1st episode, or at least be aware is very different in tone from most of the show. The show also has supernatural elements that come into play, especially in the last arc, but most of the show is a mafia story and I thought it was great.
I agree with this. Gungrave is surprisingly good.
