MGS - the smart color schemes keep the low res textures looking decent to this day

Wipeout XL

And yeah, Parappa holds up, although he's almost 2D himself :D
 
I was going to post a huge list last night, but screw it.

Rorscrach reminded me of Saga Frontier II.

One of the most beautiful games I've ever played. It's a shame that the game itself is crap. I forced myself to play it just to look at the pretty environments...but I didn't last long. DAMN YOU CRAPPY GAME DESIGNER WHOSE NAME I CAN'T REMEMBER!
 
Ocarina Of Time- blew everything away at the time
Donkey Kong 64- amazing colours and lighting
Metal Gear Solid
Gran Turismo- both pushing the PS to the limit
Banjo-Kazooie- great textures
Perfect Dark- some slowdown, but excellent graphics
World Driver Championship
 
This title is auspiciously missing guess I was the only one who thought it was groundbreaking graphically for consoles.

The IGN and GS screencaps don't do it justice. This game looked mesmerizing in high hes mode the fire affects especially were amazing.

I liked how FF:CC carried on the style of FFIX, though it's a shame the game turned out so-so.

I agree, although the low framerate was a problem.
