Just refreshed and saw them in stock again. Clicked Add To Cart. Sent me to an empty cart and now it's out of stock again. Dammit lol

You must be new to Nexus launches. This happens every time to varying degrees. The Nexus 4 was the worst one.
The fact is people who used website monitors probably got in the minute the site went live, and the rest is history.
I know this because I did that for the Nexus 4 and 5. In the 5's case, the product page went live a few precious minutes before 1pm, and my website alerted me. By the time the official launch time came, the stock was all gone.
With that said, after the Nexus 4 debacle, Google now does stock checks where they halt orders until they can confirm that they still have stock available. This is to prevent long backorders. So, they may make more Nexus 6's available through the day. Maybe.

Well if I'm getting it in 3-4 weeks I'll be out of a phone for 1-2 weeks as my VZW contract is up on the 15th
What are my options? Maybe just get a feature phone to hold me over for a couple weeks? (I'm switching to T-Mobile $30 plan)
Just stick with VZW for one more month. You will still be out of contract when you switch.

I wouldn't go by the ship dates. Nexus 5 for me was the same thing. Said some weeks but got the tracking rather quickly.

If this is all correct that's ridiculous. Get a good amount of stock for your phone or don't open orders until you have it. In this day and age shit should not sell out in a minute.

Lots of people ordered at 1:15 PM or so. More ordered at ~1:40 PM. I ordered at 1:55 PM. They are selling out quickly (<30s) but there have been multiple sets of stock released.

You said this earlier - I don't think you get how contracts work. When your contract is up your service doesn't just shut off, it just means you're no longer obligated to remain with them without paying a cancellation fee. After your contract expires you can leave whenever you want for no fee. So you can go another month or, shit, another 6 months without having to worry.
Well I'm not renewing my 2yr contract. So I would assume they'd stop my service...

Why? If anything I think the fact that they seem to have a small amount on the play store means the carriers will have ample supply.
