I've got an old Antec TP3 650w power supply from my computer computer that I was going to put into this build, but I'm now thinking of getting a new power supply all together because my old one only supports 4 sata connections and I kind of want 5. Plus I want enough power to support more case fans etc. I have bought the parts listed above already, but haven't had the time to put any of it together yet.
I was recommended to get a Thermaltake Tough Power XT 875W. Seen here. It's expensive but its modular and supports up to 8 sata cables and everything I could want.
Do you think it's worth it or am I going overboard?
IF you plan to drop more $ on Sli/xFire buy a new PSU then.

A lot of SSDs use the same controller type (e.g. SandForce 22__ or Micron). Then you have brand firmware per drive, utilities for each drive, how each drive stores and does it data compression, and what type or memory it is using.
A lot of those will be similar across brands on similar models, but there is a lot of SSD variety now. Variety of hiccups too.
