I don't understand the people knocking beef for lack of versatility.
These are all foods where beef is the key ingredient (just to name a few), not taking into account pasta dishes or stews or whatever where it is a vital secondary ingredient:
Steaks (All the different cuts as opposed to chicken where you get essentially 4)
Burgers
BBQ: Brisket (and burnt ends), Beef Rib, tri tip, picanha
braised short ribs
chicken fried steak
All Beef Hot dogs
These are all the common ones. Then there are all the various mexican and (westernized) asian dishes that rely on beef (in my opinion the best dishes are beef based).
I would argue there is a lot more you can do with beef than you could with chicken or pork. Not to mention Beef can be used as a substitute for other red meats. Can't say the same for the white meat and the other white meat.
