The Universal cases should fit the 4S as the cutout for the mute switch is longer than the previous AT&T 4 cases.

I've rarely had problems with them, even in SF. If I know that data's going to be a mess, I like being able to switch to Edge for as long as I need to then switch back to 3G when out of the city.

I haven't touched the iPhone 4 much, but I know my iPod Touch (2nd gen) can be fairly sluggish when opening menus or apps. I'm sure the iPhone 4 is orders of magnitudes better, but you can always improve on that unless every menu and app is already opening and closing instantaneously.
I also think the 4S will see a lot more people upgrading from the 3GS and before than from the iPhone 4, so there will be a substantial boost for them.
