I think the legal liability for bricking a phone is too great for Apple to ever actually do something like that. eXxy said:You can still unlock it using the existing tools pre-update, but if you update the firmware, none of the tools will probably work, so it's either an unlocked phone w/o update or move to Cingular -- for now, at least.

As expected, the iPhone 1.1.1 Update will remove all 3rd party applications when you update.
Simply reinstalling Installer.app will not work as the Installer.app application is firmware specific. At present only supports firmwares 1.0, 1.0.1 and 1.0.2.
We are hopeful that nullriver will be able to update their installer to support 1.1.1, but there are no guarantees. If 3rd party support is important to you, you should wait to update your iPhone to 1.1.1.
Some brave souls have tried to update their SIM Unlocked iPhones to 1.1.1 and there appear to have been mixed results.
Jonathan Seff at iPhoneCentral gave it a shot and found that his unlocked iPhone now gives an "Incorrect SIM" error. He even went to an AT&T store who gave him a new SIM and still no luck.
Meanwhile, a few anecdotal reports indicate that some people have been able to successfully upgrade their unlocked iPhone to 1.1.1 without any ill consequences.
At this early stage, we'd recommend people with Unlocked iPhones continue to wait to update while more definitive testing has been done.

It'll be a while before they release anything remotely as cool as what i'm able do on my "hacked" iPhone right now.
I'll keep it at its current version until it's all sorted out becasue i seriously won't miss being able to access the iTunes WiFi store or their awesome new password setting.....

NOPE.
And I think the Wi-Fi iTunes Music Store isn't something I'll be using much at all anyway, seeing as I don't really buy music from the iTMS (only time I did get anything was when I got a iTMS gift card from a friend).
