Yeah, she felt really shoehorned into Jessica Jones and Iron Fist. Like, sure, she had stuff to do and say in those shows, but I think the writers could have managed just fine without her character and the stories wouldn't have suffered.

I think that's practically the definition of shoehorned. (And didn't she save Luke Cage in Jessica's apartment, too?)

The Iron Fist appearance was terrible. If she just showed up training at the dojo, fine. When she crossed into Season 3 Felicity level of defeating ninjas, it was just too much.

She's shown as being pretty tough/athletic by the time Luke Cage starts off and it's implied that she's been Colleen's student for a bit, iirc.

Going from "destroy the universe" to "destroy the Earth," Galactus' threat seems like a comedown from Thanos'.
So what? It's not like you expect the heroes to lose in either scenario.

Power levels aren't everything. You can't reduce every villain in the story in that way.
