I don't think the idea of game remakes is so terrible. And I think there is a big difference when compared to something like movie remakes. Games are so inherently tied to the hardware they are produced on that when a few generations of hardware pass and standards rise, that mixes with nostalgia and people begin to speculate on what their favourite game would be like if it was to come out now. So many sequels in games are already pratically remakes themselves, why not play something similar with a setting and scenario that you love. There's no guarantee that a new setting, new characters, etc. will appeal to you in the same way.
I think it is ridiculous to say 'but people have already beaten it, why would they want to play it again'. Why is it only with games and not music or movies, that there is this idea that once something is beaten, that's it's discarded onto a pile, unless they are unlockables as incentive to replay. There seems to be no conception of replaying something just for the enjoyment that it gives a player. You don't listen to an album, think 'now I know all the tunes' and never listen to it again. And I doubt there is anyone in the world who doesn't have a whole armful of movies that they've watched over and over, until they know them inside out and still get enjoyment out of watching them again.
While a developers personality will have a bearing on how a game turns out with games, unlike movies and music, how that vision manifests itself is more removed from the reality of the game, in particular because of the limitations of technology.
