....are so good, and add a lot of weight behind certain lines of dialogue, or certain scenes that WERE left in, or put back into the Extended Version. The 3 hour cut is still the best IMO, but an extra 20-25 minutes of these scenes would've made it even better.

False. The very fact that James Cameron wants to make the sequels is because they did enormous amount of flora and fauna - details to the world of Pandora. Even still even with assets and basic stock footage making CGI is a pain in the ass. You need very special and VERY powerful computers to do movie quality CGI, and it's a painstakingly slow process. The assets are there. The quality stays same. I can see them build few more creatures and the entire underwater scene. Maybe even Earth locations.
They can make both movies using 200$ Million Dollars or 150$ Million Each without losing much quality.
