I love it. The people who complain about it seem to have missed the point that the journey is the plot. It's pretty much all about their adventures as they travel, and how the main three relate to each other and develop bonds over the trip. Some of the episodes are better than others, but it's often hilarious, usually entertaining, and at times downright brilliant (see episode 14, Champloo's answer to Bebop's Ballad of Fallen Angels).
The only real complaint I have is that Fuu gets captured too often in the earlier episodes. I think it happens about 4 or 5 times in the first 10 episodes or so, one way or another. It's a pretty amusing running gag, but it does get a little old. Fortunately, that trend hasn't really continued ever since then. I guess it's not really any different from Faye so often getting into money troubles in Bebop. Sort of a bad habit of the character.
But what other animes feature gay Dutchmen, Okinawan pirates, beatbox samurai flunkies, and getting high off secondhand smoke? Not enough, I say.
