I obviously don't know much about this thing beyond "random" and playing my library. Can I pick a specific song from a folder, but then have the I-pod go back to playing randomly from the whole library rather than just that folder?

As far as I know, it'll only randomly (I'm assuming you mean "shuffle") play in the "folder" you specify it to.

Like if you browse by album, and play an album, it'll only shuffle that album.

You could just set the iPod on shuffle, then play the one song by browsing from the library.

Sure. After you pick the song, the iPod will them randomly select some of the other music in the folder. If you want it to choose from your entire music library, select it from the Songs -> All menu, otherwise, just pick it out of the respective album/artist/whatever.
