I guess it's because 120 was the number of stars they managed to get into Mario 64, without any real significance (maybe they thought they felt enough), and then sticked with that number for the other 3D Marios just because (but added bonuses for players who wanted more). Hell, IMO Mario 64 flat out controls tighter than SMG hands down.
