PSX - Castlevania: Symphony of the Night (I, too, bought it completely on impulse. I knew nothing about it at the time)
N64 - Banjo Kazooie, it hasn't held up as well as others, but at the time, I loved Banjo more than even Zelda (since then OoT has replaced it as far as actual all time video game love goes, but at the time I couldn't get enough of Banjo).
SATURN - Panzer Dragoon Zwei.
PS2 - The whole of the quirkier niche Japanese games that don't get released on GC or XBox.
GAMECUBE - Super Mario Sunshine (it's good)
XBOX - Halo.
PC - The PC game I've enjoyed more than any other PC game is Blood.

GENNY - Shining Force II - it's arachic, simplistic and shallow by today's standards, but it was my favorite genesis game back in the day. I wasn't huge on the system anyways.
N64 - Zelda OoT - Great realization of Zelda in 3d
Saturn - Marvel vs. SF - 4MB cart plus CPS2 goodness, enough said
Dreamcast - Vampire Chronicle - Best version of Vampire Savior, even though the Saturn version is closer to the arcade graphically

PSX - Castlevania SotN : No Playstation game stood this test of time and plays exactly how I remember.
