Now that you said that, i think you can actually spec for other clans skills althought it would be a bit bad in term of lore\story consistency.

From what I've read, there's no real limit to how many skills/disciplines an elder can learn from different clans. However there is a limit to how powerful those skills can become based on what generation of vampire you are. Generation determines what your power limit is, the lower your generation, the higher your power cap.
