What game had your favorite stealth gameplay?

Thief 2 by far. It is to this day the most fully realized stealth gameplay ever witnessed in videogame format.
Also one of the greatest games ever made.

I've never played Thief 2 (played the first one). I bought the game much later, but I can't get it to run on modern systems. Is there a way to get this, or even the first one, running on anything newer than Windows 95?
I recently replayed Thief 1 and 2. Assuming you're trying to run them in Windows 7, you have to run them as an administrator in order to get the cutscenes to play, and you have to set the processor affinity on the games to a single CPU every time you boot them up, otherwise they will lock up and you'll have to terminate them via task manager.

If you want to run the games in widescreen, you'll need to use The Dark Mod.

This version runs fine on my PC, but I think there are workarounds out there for the old retail copies. Just do some Google sleuthing.

While we thief fans have taken over the thread it bears mentioning that the least regarded game in the series (thief 3) has one of the best levels ever made in a video game: Robbing the Cradle. The way the level tells it's isolated story of the cradle and it's inmates is just fantastic and imo haven't been surpassed since.

For good levels with emphasis on stealth though, Shipping... and Receiving from Thief 2 might be my favourite. just tons and tons of stuff to steal and explore in a huge kinda non-linear level. If there is one level the designers for Thief 4 should look at it would be this one.
