What Owning a Ramen Restaurant in Japan is Like

I pretty much drowned myself in ramen and udon while I was in Japan. Those and tonkatsu. I had some more expensive meals, but most of the time I chose one of those two because they're so, so good, they're quick, and they're everywhere.. Since then I'm back in Denver where we have maybe 2 places in the whole metro area that can even be compared and I'm not near either. I miss everything about those noodle houses :(
 
I'm going to a local authentic japanese restaurant every few months to get my ramen fix. So good. Sad that it's not as mainstream as other fast food stuff.

Tho I wonder, why doesn't he simply hire another worker and cut his hours shorter? Delegation is a very important skill.
 
Great video. Me and a friend usually eat a bowl of ramen at this small restaurant in NYC. Now I want some ramen.

Owning and operating a small bar or restaurant is crazy crazy work, it can really steal your life away from you, and it gets worse the more you invest in decreasing your dependence on premade products in favor of self made. This kind of work with very fast and immediate contact with costumers can be a lot of fun though.

I think he said he has a part time worker who comes in from 9:00 am to 3:00 pm, and his parents help sometimes as well. He really wants to find someone else to help, but no one wants to do it.
 
I remember a really small restaurant of Ramen near where I stayed when I visited Japan. Man that was some good stuff.

Also, I'll never understand how the average japanese dude can eat ramen so fast lol.

Yeah, I went to that michelin ramen place and... i ended up taking longer than literally everyone else there. I guess when you eat it a lot it's just something you have to top yourself up before you go back to work or w/e
 
Great little documentary. I really love the idea of owning a small eatery like that, I have a 'full time' job but work overnight every Friday at a small bakery and while I'm not big on the baking part/overnight hours (quitting in a few months because of the schedule), I really respect what my boss has done and would love something like that for myself with a different type of food.

Love how this documentary focuses on the cleaning aspect, really underrated but important part of running a kitchen is the full cleaning you have to do every night.

Re: the video. Holy shit at those hours. I'm reminded of the other thread speaking of their dwindling interest in sex; but really, it's the work ethic that Japan has to worry about... No one has time for themselves or their family...
 
There's a great and seriously hard minigame based on this in Yakuza 5 as a sidequest for Kiryu where you help out a guy who runs a noodle stall.

You have to cook the noodles exactly how the customer wants, it starts easy but then you get a rush, when that comes it is pure insanity and you are juggling so many different things at once, it requires incredible timing and co-ordination if you want to get them all right.

Disclaimer: I think it might have been soba noodles, but I wanted to get this in there all the same.

Eh, People who own their own business put comparable work everywhere, at least when starting. Starting a business is no joke.

Now, when employees are expected to do the same, that's a problem.

At least in corporate Japan, and I do expect trickledown to even smaller buisiness, there's a culture status of loyalty in the workplace. People (an almost entire collection of workers) often stay multiple hours after their mandatory hours just out of loyalty and it in some companies it even feels slightly disrespectful to be the first one out the door. This is also why "Let's go drinking co-worker" is so prevalent in Japanese media, with Holidays and time off being so disregarded it is not uncommon to see salarymen work till midnight or whenever past train departure hours and have to drink themselves to sleep in a bar or a coin hotel.
 
That guy is incredible for being so dedicated + humble about his job. It's really inspiring.

Hopefully some day I can visit his shop and try his ramen.
 
Damn this makes me hungry. Only had real ramen a couple times, I wish there was a place close to me. Maybe I'll try to make it one of these days.

I'm a dude that can put down some food, but I've been to Japan three times and how fast they eat ramen (and rice) just blows my mind. Seriously just wolf that stuff down.
 
i looked at noodle recipes about a week ago and i guess youtube just thought this was something i'd be interested in and recommended the video so i saw this video yesterday before it was being shared everywhere.

though disappointed that when i looked at the other videos on his channel it seems like a weird anomaly video as others are mostly about his kids.
 
I had ramen once in this super expensive Japanese restaurant in Prague and it tasted terrible :D

I wonder if one from a different chef would taste better to me. This guy's ramen looks much much better.
