Everything in that video looks amazing. I wish I knew where to get a good bowl of ramen 'round these parts.

Same. My town is pretty rural and there's no real Ramen place in town, just Pho and they use the shittiest, fattiest cuts of beef that don't taste good at all.

I like some fat in my soup but I like meat even more.

There's a great and seriously hard minigame based on this in Yakuza 5 as a sidequest for Kiryu where you help out a guy who runs a noodle stall.

You have to cook the noodles exactly how the customer wants, it starts easy but then you get a rush, when that comes it is pure insanity and you are juggling so many different things at once, it requires incredible timing and co-ordination if you want to get them all right.

Disclaimer: I think it might have been soba noodles, but I wanted to get this in there all the same.

and it's based on the way you make fukuoka style ramen, which makes it extra cool.
 
I like ramen, but for some reason even when I lived in Japan it wasn't something that I ate a lot of.

That's because vending machines and family mart Spicy Chicken スパイシーチキン is all you need.
 
Pretty crazy. I'm guessing he doesn't have much if any responsibilities off the job, considering those hours. Unless he's getting like 3 hours of sleep, in which case that's ultra unhealthy and going to lead to issues later down the line.

TBF there are Polish workers on 0 hour contracts doing about 90-95 on minimum wage in London...

It's crazy for you and me, but horrifying common.

If you're working these hours pretty much literally all you do is work, eat and sleep.
 
I respect his dedication and love for what he does. Owning a restaurant is definitely no joke; some of the hardest working people I personally know.

In this commentary video he did, he mentions the owner has a wife and kids. He only gets to see his kids on Sunday, or if they are sick and don't go to school. His wife works too, which is why she can only come in to help on the weekend. Pretty crazy.
 
The work hours sound ridiculous, but he seems so happy -- happy and proud. The product of having your own, well, product that you believe in.

He loves what he does and he does what he loves. Good for him. Many people wish they could love what they do and do what they love.

A Japanese place opened up near where I live which serves amazing ramen. I should stop by there tomorrow and get a bowl.
 
This actually annoyed me. He uses the Japanese pronunciation while speaking English. Just say it like 'raw-men'.

This isn't like Karaoke which is pronounced differently. In fact, I've never heard Ramen ever said another way...

'raw-men' is the wrong way to pronounce ramen and I've never heard that pronunciation from anyone (I live(d) in NYC, DC and Boston)

In Japanese romaji, r in ra pronounce like mix between "r" and "l".

Oh I think I've gotten used to this. It isn't an L, it's a mix between R and L in Japanese. I can differentiate "Ra" "La" and "ら"... but I hear it like when people say Toukyou and Tokyo. (in fact, it's very strange you are hearing La...)

If I can say, the guy isn't doing this on purpose, it's just how it is for him.

Is it though? Do you hate it when people pronounce San Jose the correct way?

I love ramen but man, they are like fancy shcmancy food here in LA now. The closest one (Tatsu) charges $12 per bowl. Ugh. Ramen is supposed to be peasant food!!
 
There are a lot of establishments in Japan for all sorts of food that are a lot like this, with a pretty small amount of real estate where the owner and family do the vast majority of the work. It leads to a pretty dizzying variety of restaurants and bars and such.
 
This is god-tier food. My absolute favorite thing to eat.

I'm lucky in that the Taiwanese have an affinity for Japanese culture and food, so good, authentic Japanese ramen is in heavy supply here in Taipei.

Thanks for sharing the video, OP. I find ramen culture and the hallowed art of the master ramen chef to be fascinating.
 
80+ hours isn't uncommon at all in small one/two man shops. Seven twelve hour days. Need adequate food prep/purchasing/cleanup time along with actually serving.
