Sounds like you need more VIG. That beam hit me on NG+ and it hit pretty hard but I still had 1/4th of my HP left. Two quick estus and I was fine.

Giant Club = OHKO on stone soldiers and the knights are backstab candy. I didn't have a problem there at all.Never had a weapon even close to breaking the whole game.

FWIW, I depopulated most of the early Iron Keep (pre-Smelter, from dying so often) and got exactly 1 blacksteel kat on my dex. I wasn't farming for it (using coins or item discovery boosting or anything), though. So I don't get those who say it drops like candy, all I ever get are leggings and gauntlets, but I did get 1, so I was happy. That said, now that I dual wield, I hardly ever use it anymore since I don't have enough STR. There are other very good katanas. The blacksteel is the strongest one at 40 dex, but it does not have the very useful R2 thrust. I find the Uchi, Manslayer, Washing Pole to be more useful. Haven't used Darkdrift much yet, I imagine it can be funny in PvP.
Go with the superior dex weapon... curved greatsword! Like your sephiroth!

Sin doesn't reset when going to NG+?
It does remove all sin gained in your current playthrough. If you've carried it over to a new playthrough, it's stuck there and can't be absolved.
Uhh what? My experience differs from that. Before moving to NG+, I had apparently sinned, because Cromwell asked for 134k souls for pardoning. I am not sure what my sin is as I had never aggro'd NPCs nor did I use any cracked red eye orb, the only possibility that came to mind was invading the NPC

I refused to pay, moved to NG+. When I got to Cromwell again, he said I had no sin. So uh... whatever it was, it went away by moving to NG+. :S
Was phantom range as bad in Dark Souls 1? Didn't play much PvP before 2. It really doesn't seem like it was as bad.
At least lagstabs aren't near as common, but those still occur sometimes too.
This has been my experience as well. Greatswords and curved greatswords have ridiculous phantom range, especially. In my limited experience it made the poles and claymores from Demon's Souls seem reasonable in comparison. XD
