There really should be more costumes that alter hair colour. It's not like most of the alternate colours have direct basis in source material, so why not vary things up a little more?

Actually, that's not entirely true.
There's a few characters that don't have alt colors that reference any source material (in Brawl), but most actually do, even though the references occasionally are super obscure, like the color palette that appeared on the box art of one specific version of a game or something.

Craziest thing about this? Ganondorf was played by Matthew Mercer, who was also the director of the series and voiced Kirby and Meta Knight. Since then he's become a pretty big-time professional voice actor... including the English voice of Chrom! So that trailer cameo is sort of a full circle thing for him in a way.

Such a cool series, I should give it a rewatch sometime...

I'm aware of that, but there still are quite a few palettes invented from whole cloth that could really do with some more creativity. Rosalina, Ganondorf, Sheik, most Fire Emblem characters and Fox come to mind.
