You don't understand how the estus flask worked and why it was such a great idea. It's all about resource management, but erases the "waste time getting stuff" component. If anything, grass in Demon's Souls has less resource management, because you could have 99 grass if you wasted enough time. With those kind of resources, who cares if you use grass? Resource management goes out the window. It becomes less about strategy and more about how much time you have on your hands. Since the estus is absolutely fixed (15 max if you pump a lot of humanity into the bonfire? and then its just that bonfire), you really have to wisely chose when you want to use each of those flasks, because you're not getting any more until you reset everything again. That's smart resource management, you have to be smart and not just trust that you have a near-infinite stockpile, no matter how much time you have to farm and grind.
So that brings us to Bloodborne, which half-assedly brings back consumables because, like you said, that's what Demon's Souls did (probably also some stupid "blood for blood" thematic thing). It's quite literally a step backwards. Nothing is added here except less emphasis on proper resource management (since you get the maximum number possible fairly easily, and can keep getting more on the same life after that), and the annoying farming that takes place when you actually run out. It's the worst of both worlds.

He can't go past the doors, and he starts walking at you slowly once he's on the stairs (except to lunge or sprint every now and then). Basically keep him tethered around that spot and abuse charge attacks to bait and hook.

Dark Souls gameplay is crappy compared to Demon's Souls and Bloodborne. Combat is slower and clunkier, and shields are way too good. I used to say that Dark Souls (and Demon's Souls) was just watered down Monster Hunter gameplay, but Bloodborne has caught up a lot. Monster Hunter is now comparable (though still a bit superior, IMO) to Bloodborne.Come on now. Bloodborne gameplay is awesome but Dark Souls gameplay is not crappy in anyway. It is different.

You don't get it for free though! You have to pump in precious humanity. And even after that, 15 is wayyy less than 99 haha. Bloodborne is much better, but I don't think the extra frustration is really worth it. On the life you're actually playing on, the risk of using a health pack in Dark Souls is the same (if not greater) as using a blood vial in Bloodborne. It only becomes extra resource management in Bloodborne because the alternative (getting more health packs) is legitimately not fun. That's not the kind of difficulty people are talking about when they say they like Souls games for their difficulty. You can be as careless as you want with those 15 estus flasks, because you get them all back every time you screw up. In Bloodborne, I have to think about whether I'm willing to use one of my vials when I get hit, because I might not be getting more vials for a while.
I get you want free healing, and that's okay. But let's not pretend that getting more stuff for free makes you more cautious about using that resource. That's silly.

Eh I don't think that's really accurate though. One good attack can be impossible to heal from. Like you're right, but I think it's overly punishing to assume everyone should be able to completely heal back from every attack. Sometimes the smarter thing to do is back away.

Finally, found the shortcut in the forest back to the lantern. I'm had 40k+ blood echoes too. That place can be irritating if you're not careful.

I beat the Blood-Starved Beast, killed the guy on the turret, I found a path down to the city from the tower outside the Odeon Chapel. Is this the right way to go? Having to fall down this rafters is really dangerous and I'd like to avoid doing it repeatedly.
