When I lived out of home, I'd go vegetarian every now and then for short bursts (usually for about a month or two period), there was a REALLY good vegan takeout near me which totally changed my perception on vegan/vegetarian food.
Now I tend to have more seafood dishes being at home with a peppering of meat dishes every now and then (both parents are spanish, specifically from a beach town, hence the seafood) but sometimes we'll cook an awesome meat dish like lamb shanks with the richest tomato-based sauce which wreaks havoc on my insides but fuck I don't care. Tastes so goooood.
I do my best to not use animal products as a matter of principle; I object to the way animals are treated.
If I ever fuck up and use something with animal product in it (the most likely candidate for this would be, say, eggs being in something) it's on me and it's by my own hypocrisy.
