He has a habit (super buu) of screwing around during fights to suss out the situation. At 3:06, he's faking being hurt by gohan, maybe planning his next move. Who knows.
But more notably at 7:20 gohan is beating him down like in that comic, but he's not hurt again. Gohan is obv stronger, but Buu is still screwing around.
Then comes the speech about how he sensed gohan and during the fight and from then on, all he cared about was gohan. Gotenks may even be stronger but that doesn't mean Buu wasn't screwing around with him and wasting time. He says he was waiting for Gohan the whole time, "can't let a power greater than mine exist." Whether Gotenks was stronger or not is irrelevant to Buu messing around.
Buu was visually angry at Gotenks beating him. Piccolo even pointed out that Buu hated having an equal.

Because of how little we've seen him since his "debut" episode. I have the feeling we'll see him relegated to a background character until his "fight scene" in the tournament which will feel like an "oh yeah, 17 is fighting too" kind of thing.

Black didn't want to be an immortal. He just wanted power and he thought he would become rusty if he couldn't die, look at Future Zamasu. He also didn't want to be bored fighting since being unable to die kills any challenges. And it is all because he took Goku's body.
The manga, however, never really explained this. The best we can guess from that version is that Black wouldn't get any near death boosts if he couldn't die and they needed the power of Goku's body since, as Goku pointed out to Future Zamasu, even immortality wouldn't have been enough to kill all the mortals.

The ratings for this arc overall have been really poor tbh. They don't matter much and DBS kept its position in the ranking so that's what matters, but it's still interesting to see how things are going.

I don't buy the Grand Priest theory and I also do not expect SSJB Gohan. He may tap into God Ki by some metric, but I don't expect blue hair for him.
17 is probable to sacrifice himself in some way. That, or we don't really ever see him again after this.

maybe the problem is that they announced super early who the team was gonna be (and the intro shows it too) so the whole recruit arc feels largely unnecessary
