You just justified why the Souls series should never have an easy mode. The beauty of game design is that you appeal to different types of people. Do you expect an arcade racer fan to get into a racing sim? Unlikely. No doubt they would feel "frustrated" tinkering the specs to shave those few seconds on the track because it's so overwhelming.
Here's my tip for Monster Hunter, you go to the training area and test each weapon until you memorize the moveset of your preferred weapon. Then just go do a survey mission and start practicing on small monsters and see how fast you can clear them out. Once you get the "feel" of the mechanics, try attempting to do this with the bosses. Again, it's not about rushing, this is a Capcom game after all, so approach it like you would in a 2D side scrolling game and you'll have a much better time.
If that still doesn't get you to the game, there's Devil May Cry / Dragons Dogma.
