Will Dimonized UNP and CBBE interfere with SkyRe as well?
No, stuff that just changes visual stuff (+skeletons) normally does not interfere with SkyRe, even stuff like immersive Armor does not "interfere" with SkyRe, all the compatibility patch does is change things like lvld-list, armor ratings, sell value etc. so that it completely fits into the new systems.
When a mod changes things like Races, Standing Stones or Combat it will most probably interfere with SkyRe.
If SkyRe is that pervasive and invasive and exlusive for other mods, it's easier to just not use SkyRe. There are plenty of other mods which rebalance the game, such as ACE. I actually use a combination of ACE (Athyra's Comprehensive Enhancements) and Complete Crafting Overhaul + Smithing Perks Overhaul. It works great with all the other custom stuff you can add like races, armors, weapons, etc. If you're not going to be one of the default races anyways, the race modifications in SkyRe will do you no good.

No other mod does what SkyRe does, not at that scale.
Of course there are going to be a lot of compability issues when you change as much as SkyRe does but because it doesnt simply change one mechanic but all of them you get a very well balanced and thought trugh experience.
What does SkyRe change?
Combat (Magic, Close Range Combat, Assasin Style Combat, Ranged (Bows) )
Races
Magic
Standing Stones
Lvled-List
Enemy behaviour
Difficulty (balance, no lvl-scaling, no god mode after lvl 30)
Perk-Trees (adds a couple new ones gets rid of some overhaules all of them)
...
Imo a combination of ACE and Crafting Overhaul doesnt even compare...
You can still add every armor mod etc. that there is, thing is the creator of SkyRe want a "complete" experience and therefore releases patches for the most common and asked for mods that truly make them feel like a part of "his" Skyrim experience.
If you just want to add random stuff and don't care for immersion you can do just that, but I certainly don't want that for my actual playthroughs and many more think so as well.
SkyRe is split in multiple categories, one of them is the Races part, if you don't want it simply don't select it when installing SkyRe...
Then you can go ahead and add whatever Race mod you want without any issues.
I would not recommend it since his changes to the Races actually make all of them a viable choice with great abilities etc. (something at which vanilla Skyrim failed horribly, who would choose imperial if not for the aesthetics or roll play value?)
But you are right, if you want to play a race from a different mod anyway then you could just ignore the SkyRe ones, I kinda didn't even think of that possibility because I don't like/use those lore breaking races =D
Edit:
I checked for ACE since I thought it made many changes very similar to SkyRe and I was right, for example it changes ranged combat so that there are multiple kinds of bows.
Doesn't that mean it has the same compatibility issues that SkyRe has with new weapons?
And sorry if I sound agressive or something I dont mean it that way (I noticed I might do after reading what I wrote) in the end it comes down to what you prefere.
On another note I tried
"Crimson Tide" because insan0hflex recommended it once more in one of his latest videos and I have to admit that I did it severe injustise.
It is a lot better then enhanced blood textures.
