The good thing about these panorama shots (besides pixel density) is that Level of Detail scales with lower Field of View. Not all games have this though...

To all : It's weird, many of your pictures don't look like a video game (3D), they look like artworks (2D).
Do you use filters in photomode or the game looks really like that ?

Took me about 15-20 min in all.

The game really does look like a moving concept art, which is especially true on key locations in a level (like the one you quoted). I can't even imagine how many man-hours and iterations went into this game's environments.

I am using photomode filters but at really low intensity. Like, if you want to up the contrast a bit you might wanna use Noir @ ~20% and then bump the saturation a bit to get the color back.

By stitching the shots together using one of the many Panorama stitching applications.

Hmm, I was thrown off by the normal perspective. It isn't ultra wide like most panos, though the second one you shared (which is equally as impressive) does. Very cool. Will have to investigate further. I haven't done much panorama work in my pro photography.
