Apple Pie with Cheddar Cheese?

Why do you put orange food colouring in your Cheddar cheese?

Just read about why after reading this.... it's actually pretty interesting.

Seems cheddar cheese in the 17th century England had a slight yellow pigment to it from the animal's diet, and at the time cheddar cheese was really really popular. Well, they started to skim the cream from the milk to make butter. Not only did this take most of the yellow pigment away, but it produced a lesser quality cheese. People were able to tell what a good cheddar was from how yellow it was. So the makers started adding dye to it, to sell shitty cheeses passed off as high quality. Since then the tradition just kinda continued with the original intent of why it's dyed lost.
 
I don't really like apple pie. However, I can say the first time I heard of combining fruit and cheese I thought it sounded gross. I tried it though, and it can actually be pretty good.

So do high quality cheddars not naturally have yellow color to them anymore? Is that because animal diets have changed or because skimming cream got standardized in cheesemaking so most cheddar is just lower quality than it used to be? Or am I mistaken and high quality cheddars are still made with cream and have yellow color?

I feel like I know nothing of cheese now.
 
I've never tried it, but the combination isn't a totally alien one, we have plowman's lunch in the UK which is basically salad, bread and classically cheese and apple - but that's raw apple and a nice salty, mature cheese - not that nasty American gunk.
 
Wait are we talking any kind of cheese...? Or would you conventionally just use cheddar cheese? I'd probably try it.. As long as it's not like blue cheese or something :S

Mind you, I'm the boy who likes Cheez Whiz with raisin toast as a snack.. o_o so anything is possible.

Cheese used to be an indispensable ingredient in apple pie, it was the last item put in the pie before the crust. It helped keep the pie together, keep the crust from over cooking or drying out, and make sure the apples didn't make the crust soggy. It's been done away with by most people because modern flour and ovens mean it's no longer necessary.

You should try it OP, eat like your ancestors.

Sliced apple and cold cheddar go good together. So I would imagine this is good as well.

The concept of fruit and cheese platters isn't crazy. This is an Italian style dessert.
 
i'm originally from the UK and my dad has done this for as long as i can remember (not melted though), cheese + apple is a very british thing.
 
Maybe brie would be good...?

too subtle. I mean we could do an apple pastry with brie worked into the crust so you could get a different mix, but just smearing soft cheese on the top of an apple pie. Camembert might work. In chunks.
