I would suggest one with a shield, a long sword and good starting armour: Knight.
Take in mind that the starting class only affect your starting stats and equipment, from there you can build your hero as it pleases you.
Pyromancer was a good start in previous games, as it has spells but they are scaled based on levelling up a piece of equipment rather than levelling up spell stats, so you can use it in a Jack of All Trades sort of approach.

If you'veleveled up at Yoel's, you've begun the (optional) hollowing process. Now with each death you'll get a higher hollow level, which you can heal at the firekeeper. Your appearance can be healed with a purging stone. There don't seem to be any adverse effects related to hollowing however. I've had a 99 hollow level since the early hours of the game. Some folks have speculated that summoning (for covenants) may be harder, since the logo looks ruined/broken if you're hollowed.
True. Also sleeping in real life often also levels you up in the game.Remember that an underrated skill of playing Dark Souls is knowing when you need to walk away for about 10 minutes. Does wonders.

He levels you for free (up to 5 times), but the key items he puts in your inventory slowly turn you hollow. This doesn't have any stat penalties, and it's part of a questline.
