Going into deciding to remake Demon Souls, do you really think Sony was ignorant to what the game would cost to make or how many copies it was expected to sell? Come on. This is the third time Sony has put money behind a Souls game. Sony has plenty of historical data in these games. Sony has explicitly said in the past that their expectations are NOT for every game to make money so no, you don't have to worry about "future installments". Demon Souls Remake did well enough that Sony bought Bluepoint. I can't think of a better way of expressing their satisfaction with the results.
I suspect a few things went into their decision to greenlight the Demons Souls Remake...
1. Sony probably thought of Bluepoint as an acquisition target for a while. Sony approaches Bluepoint with the following premise - "You remake Demons Souls for us and we'll staff you up so you can become a legit studio. That way, you can create an original IP afterwards."
2. Sony probably isn't oblivious to the fandom Bloodborne seems to be retaining. They probably thought, if Bloodborne sold 2 million, maybe we can market DS as the showpiece PS5 launch title and get 2.5 - 3 million sales in year one. Games fail to reach expectations all the time.
Put 1 and 2 together and it seems to make some sense.
And Sony didn't buy Bluepoint because of Demons Souls. Sony bought Bluepoint because they view them as a talented, trustworthy studio who's hopefully going to produce great games for PlayStation over the next 20+ years. (Though, maybe we're saying the same thing here)
How about we cherish what we have for now and stop being concerned about the future.

Epic deliberately left the Gears of War franchise because each game seemingly had a sales ceiling and the cost to make each game kept rising.
Demons Souls sells half of the worst selling Gears of War game (3.2 million vs 1.4 million), and it's probably more expensive to make considering it's a PS5 exclusive.
But let's throw a parade for Bluepoint? Fandom is so bizarre.
It's great to see how well the game sold and that number will continue to rise as more people are able to buy the system. There's some who are downplaying the number sold, but it's not always just about copies sold or how much money a game makes. Sony has spoken about this before and I'm glad they have that viewpoint. Otherwise, I may never have had the chance to play some of my favourite games of all time like Demon's Souls (PS3) and Bloodborne. And when I can get a PS5, Demon's Souls is the first game I'll buy.
While I do believe it's a great game for me it's was more about showing off the power of the system than releasing a remake of a loved title. Sony usually has something at launch that does this. With the PS4 I believe it was Killzone ShadowFall.

Both the original costed less than Gears 1 and Demon’s Souls (2020) costed less than the latest Gears.
Epic give up on Gears because even having the development cost increasing the game could only made $100m.

They started very profitable but at the end it was only break even.
To put in perspective Demon’s Souls original was already profitable selling less than 1 million copies.
PS. Why not compare Gears budget with Uncharted… they are more like to like and devs put more money into it:

Demons has mo cap, a live orchestra and super cutting edge next gen graphics. These kind of games are the reason next gen games cost more.
