What place do they have to talk him down? Why should he care? They don't know anything about the situation. It's between him and management. I've been in a situation similar to this, only it was a drunk dude (and probably some other stuff as well) in a Wendy's. Was with my family and my dad, was at the time (he's retired now), a correctional officer (so he's trained on how to deal with things like that). The store had already called the police, so we just sat and watched an asshole be an asshole.

For one, it's a liability issue, especially if the guy is violent. Say someone steps up and gets hurt in the process, that's a potential lawsuit against the McDonald's.
