Are all those options different kinds of meat? Sorry I’ve literally never heard of them. Also, are we talkin hard or soft shell here? I was thinking like a soft shell food truck style taco
Yes those are traditional Mexican fillings (carne asada is steak) eaten on soft corn tortilla, flour tortillas aren't real popular in Mexico except for the northern part.

The pastor one is filled with only ground beef from cows not older than 10 years of age.

I changed my mind, I'm going with pescado, because who doesn't like a nice, pungent fish taco?
Shrimp tacos are also magnificent in their own right. I californify that shit with shredded cabbage, some lime, cilantro and a piece of avocado.
The flavors, when they smash around within your oral food processor all meld quite perfectly. A symphony of flavor, yet with only a few ingredients.
There is a beauty in simplicity, and that is what Tacos are all about.

Taco night in our house consists of the old el paso hard shells, mince with seasoning, lettuce, red onion and mixed peppers, cheese & salsa.. I recognised none of those things, I'd love a proper taco tbf but we keep it easy and recognisable for the kids
If you want to try and make a traditional taco Grill some flank steak cut it into strips garnish with diced onions, lime juice and cilantro thank me later.
