There's a Duel mode where it's just you against someone else and without all the npc mobs.

Yes you can and that's what Aris has been doing. When you lock on your enemy you have 3 ways of blocking and you match the direction the side they are swinging. There is a guard break, but that can be countered if you become obvious with it. There are combos for each character but you can change the direction between each swing to cause a mix-up if you are able to land the first swing.
