GAF help me eat cheap (AKA How do you cook dried beans?)

Currently, my debt is outpacing my income, and one of the place I can actually make cuts is food. Up until recently, I haven't had to cook cheaply, and I could use some tips/recipes. I was also recently diagnosed with diabetes, which also called for a change in my diet.
Important Considerations:
1. My Doctor recommends Dried beans, as he says they are good for me. I've never cooked with them much, but they are in my budget.
2: I get several free ingredients a week. Each week, I reliably get a dozen eggs, a gallon of raw milk and a pound of steak.
Any good and cheap recipes will be appreciated. Thank you for your help.

Ingredients:
12 raw eggs
1 gallon of milk
1lb steak

Crack all twelve eggs into a large mixing bowl and stir. Pour 1/2 gallon of milk into the bowl. Place the raw steak in the bowl. Bake at 425 degrees for 1 minute. Pour the remaining 1/2 gallon of milk into the bowl and serve immediately.

Optional side dish: dry beans

Bacon grease (another cheap option) is a good base. Also a hambone.

Beans, squash, and corn is a very cost effective nutrition base.

Lentils have a good variety and can be a replacement for rice, good for diabetics. I like fresh cilantro(cheap) chopped and added with a bit of salt and fresh garlic. Hard boiled egg or strip of steak along with the lentils and you should have a nice protein rich meal that won't spike your blood sugar.

You can literally throw anything at beans and make them taste good, depending on the type of beans you're using. It really depends on what you want to mix.

You can probably break those free eggs you get, put the washed beans into them/"wash" them and fry them that way. But you'd be better off getting some noodles, a bellpepper and/or onions, dicing those up and frying those with the noodles (once cooked) for a bean "salad" mix.

How to make frijoles de la olla (Mexican brothy beans)

you will need:

Pinto or black beans
one or two peppers, Jalapenos or Serranos
whole Onion (chopped)
few Garlic cloves (chopped or crushed)
Salt
Chile powder (Optional)
Garlic Powder (optional)

pour some dried beans into a pot. Keep in mind they will expand to about 3 times their size, so don't use too many. Cover them with water and swirl them with your hand for bit. Pick out any floating beans(they are bad), and any rocks you find. Then pour out the water(it probably is dirty now), and add more water and swirl and rinse. Continue until the water is clean. After they are clean put enough water in the pot to cover them by at least double the height of the beans.

In the meantime, heat your comal or flat pan and place your jalapenos on it. Rotate occasionally, to get them roasted and soft on all sides. After they are done, cut off the tops and cut them in half. Remove the seeds and the veins, and then just throw them whole in the pot with the beans. Add the onions, garlic and add salt(You can always add more later). You can also put in some chile powder and garlic powder if you like.

Heat the beans up with a lid on. You can boil them if you want them to cook quickly, or simmer them for a few hours. If you cook them on high heat, they will cook faster, but they will also split and lose their shape. They will taste fine though. This works well in a crock pot. Check on them every once in a while to make sure they are always covered with water. It can all evaporate, and the beans will burn, and not only are they ruined, and smell bad, but it could wreck your pot.

When the beans are soft, they are cooked. Taste the beans+broth, and see if they need more salt. Otherwise, eat with the broth! You can fish out the jalapenos if you want.

There's tons of lentil soup recipes out there, give them a try. Don't go crazy but a healthy amount of fat will make it much more hearty.

Also, black bean burritos. Saute peppers and onions till soft, throw in can of black beans, then add cream cheese, and cut up cilantro for the finish. There's a recipe out there that you should be able to find.
