Actually according to my massive cookbook dedicated to only curries around the world.

Modern Chicken Tikka Masala is a British-ized version of the Indian originating dish.

I don't have the book on me right now but IIRC during British rule a British officer complained at a restaurant while stationed in India that the Chicken Marsala (I'm guessing but not 100%) had no sauce so they took it back and poured some tomato based sauce over it and resulting in what the modern dish is.

anybody making any christmas cookies?

I'm of swedish/norwegian descent, so my family always makes 3 kinds of specific cookies. I only make 1 of them because the ingredients for the others are hard to find

The usual favorite of the 3 is krumkake, though. very thin and rolled, then sprinkled with powder sugar. I never make them because you need a krumkake iron to make then and i don't have one. They are so good though

Today I made "enchiladas verdes de pollo" with spanish rice. I was only able to get a handful of green chiles, so it wasn't as green as usual. I also prefer to have more sauce to really smother the plate and enchiladas, but it was still delicious.

Thank you OnkelC for the welcoming! :D And to answer your question, yep, I'm from Portugal alright. From Braga, a northern city. Did you stay in Algarve or have you visited other regions/cities?

I will post some traditional christmas desserts in the next few days... Hope you guys will enjoy them!

And finally, that Chicken Masala, Enchilladas and the homemade bread are just mouth watering inspiring... hehehehe Kudos to all of you guys!

Hey folks,

I was wondering if I could trouble you for a simple homemade pasta recipe. My brother is coming back from the hospital today and it is family tradition to always have Italian food on Christmas Eve. So this year I was thinking I would cook up something extra special for the family. I have the sauce and meatballs down but I'm looking for the exact ratio for eggs to flour for the pasta. I also have a rolling pin and pasta cutter so equipment should not be a problem. I found a couple decent recipes online from Google but I figured that GAF might have an extra secret grandma's recipe.

To be honest, I wouldn't experiment with fresh pasta right before a family dinner. Better buy some quality fresh ones for this occasion and try making them from scratch without an "audience" .

Rolling your own pasta with a pin! Damn, that is manly. I use a kitchen aid for kneeding, sheeting and cutting.

Here is what I made today. Chicken Korma. I used the second portion of organic thigh meat that I got at Costco a few days back. I suck at cooking chicken breast so I'm loving the more latitude that thigh gives:

Ingredients (chicken thigh, whole fresh coconut that has been pureed, sprig of curry leaves, onions, fresh coriander, ginger-garlic paste, turmeric, mustard seed, cumin seed, ground black pepper, fresh green chilis, hing, salt, cumin pwdr, whole garam masala, coriander pwdr, oil):

I couldn't really afford to buy presents this year, so instead for my mom's birthday today, I made a variation of the basic tart I'm trying to master: this one has a cocoa tart shell, a layer of almond cream, a layer of raspberry wine compote, and sliced blackberries and almonds on top.

I'd like not to be one of those college kids that only eats crappy food. Plus, cooking is sexy as hell, and as a sexy person, I should be able to do it.

Learn which oil to use so your apartment doesn't fill up with smoke.
Sometimes high heat is not the best heat.
Bacon smell can last for up to 14 hours.

So like,

Having preparation pics for all the things I've made would be overwhelming. Here's the end results though.

I think the picture a tad earlier so it's missing a very unique crystal coffee cake. Two of the so and so amount of dishes are not common. The rest are traditional holidays food. Xmas and thanksgiving.

Maybe try cooking with someone you know that can cook well. And have that someone on speeddial in your phone so you can call them when you're cooking and have a question.

Onkel, I will take pics the next time. I made the pie in the evening and the pictures tend to suck then. It was completely eaten quite soon after that!

I dunno, I've been cooking it for a good part of this year and it has been remarkably easy. I run into a little trouble with coconut but I've, for the most part, avoided meats which simplifies things. Give it a try!

Today I made some Baba Ghanoush, california style. Used our eggplants, along with our high-quality olive oil and tahini from our state. Arab bread was from Trader Joe's since I had a gift card there.

Finished puree (roasted eggplant, tahini, garlic, salt, parsley, chili pwdr, hing, lemon juice, a pinch of cumin pwdr) dressed with fresh olive oil and chili pwdr. I drench the arab bread in olive oil and broil it with parsley:

Has anyone used Cast Aluminum cookware? I noticed a handy-looking pot with a lid-come-frying pan for a good price, and was wondering whether alucast pots were any good.

I regularily use a teflonized cast aluminum skillet from Fissler, good and solid stuff, recommended. No real benefits over steel or cast iron cookware, though.

Good to hear. Not really looking for benefits, just want to be wary of disadvantages. I'll post pics when I get the set.
 
I made Dinner today, cooking for the first time after 4 months or so. Made Boil Fry, which is like Scambled Eggs but using Boiled Eggs.

i made arroz con costra this weekend. it's a paella variation which includes a egg crust and full of goodies like chicken, chorizo, calamari, shrimp. it came out amazing.

I picked up this cook book today.

I guess it's my x-mas gift. I ordered it a weeks ago and my dad never told me the book store got it in. So I just said "hey old man, we have a pad of paper by the phone for a reason. Now give me some money to get it."


I can't image making most of his dishes unless I get my hands on 40lbs of pork belly. But there are some very simple instructions for fast pickling of various veggies (did Chang start the house made pickles that are all over NY?). And there are plenty of asian comfort or street food dishes that I've never had.

Roasted Rice Cakes stands out and I'll give it a shot.

It's a very comprehensive book. It even has explicit details for how to make you own ramen noodles.

It's also a nice read. Much has been made how much "kitchen talk" or curse words he writes with. But to be honest you would have to be a supreme little bitch cunt to get your panties in a knot.

Guh! I'd love to have a copy of this. My knowledge on making Asian cuisine is quite limited, but there aren't a lot of cookbooks that are especially useful to me these days since I'm on such a limited budget. I got these two for Christmas:

The Julia Child one will be a nice asset for all of the techniques she details rather than the recipes themselves -- not that those are anything to slouch at! The pastry book is an absolute behemoth and quite impractical for the time being (the recipes are for large-scale baking versus making a single cake or whatever), but stunning to fantasize about, and it'll serve as a nice primer to my classes in the spring.
