I don't see a problem with more copies being printed. The point is to put physical versions of digital games into people's hands for a variety of reasons for the novelty of it, for people to own more tangible manifestations of their favorite games, for archival purposes ... but not to create new collectibles just for the sake of making new collectibles. Of course there's an inherent collectability to these things, especially when Limited Run numbers them, but that shouldn't be the primary consideration. Getting physical copies to fans should be.
The runs are limited primarily because these are niche games that presumably wouldn't sell hundreds of thousands or even tens of thousands of copies, so it would be unprofitable to print that many, necessitating a smaller order. The runs aren't limited simply to give a few thousand people another thing to collect every few weeks.
