Must watch anime?

No seriously. Everyone I recommend Baccano to ends up loving it.

Multiple characters, multiple plot lines, that all tie together by the end of the 16 episode series. It's violent, crazy, and a fantastic watch.
 
Trying to get into some anime and I'm looking for the absolute best.

I've already watched/am watching Naruto, Trigun, FMA, Death Note, Samurai Champloo, Gurren Lagaan, Sword Art Online, Attack on Titan, Cowboy Bebop.

Those are the kind of animes I like but I'm open to anything that isn't creepy.

And are One Piece and DBZ worth starting?

Rainbow: Nisha Rokubou no Shichinin

A very good emotional and inspirational anime, it's about these groups of guys that get sent to a brutal prison and they eventually band together, try to survive, become best friends, etc.
 
Out of recent shows I'd say Space Brothers and Attack on Titan, otherwise I can't post in one of these threads with out suggesting Beck.
 
Evangelion both og series + movies and the new remakes. Also if you enjoy sci-fi/outer-space/mechs I highly highly suggest you watch Macross.
 
Wait people hate the One Piece anime? Huh, it's usually highly recommended by GAF, and the official anime thread is massive. I just started it myself (on ep 80) and while it does lag in some spots, it's overall hugely entertaining and adventurous.

I'll recommend a hidden gem, Jellyfish Princess. I don't care for shoujo, but the humor and characters in this one really made it stand out to me. It's only 11 eps I think, and the last two peter out, but it's worth a try.

It wasn't too bad. Nothing to write home about, especially since the director had done a few productions that were better before and after it.

Because GAF is a circus of stupidity at times. The only major difference between One Piece manga and anime is the fact that the latter contains a handful of production filler within it that is able to be skipped with ease. I have the choice of both products, but I don't let my impatience rule my life; this affords me the opportunity to watch the anime as per arc. I gain a full-fleshed story with the humour behind the characters and their voices, as well as the endearing music and everything that follows with it. Anyone who disputes otherwise is being an elitist sitting upon an anal-plug the size of an iceberg.
 
Clannad + After Story - The first Season ("Clannad") is set in school with the protagonist experincing fun and tragic moments. In my opinion the sad parts of the show are very well handled and in good balance with the humor. While its good, its not until the second Season ("Clannad After Story"), when it becomes godlike. In the second season the protagonist graduated from school and married his girlfriend. Its about family and coming to terms the tragic events that happened in the past with his father and the recent ones that happen to him, his wife and his daughter. My favorite show of all time. I don't know if you like it, since most of the anime you stated are action driven, but please give it a shot.
Steins;Gate - A story that starts as a comedy with a bunch of insane Otakus building some kind of time machine. But as they proceed to change the future with it, terrible things start to happen. If you like time travel, weird characters and mystery.
Bakemonogatari, Nisemonogatari, Nekomonogatari,... - This is really comes down to weither you like weird shows or not. Its about weird events and characters with really funny and interesting dialogs. If the plot and the character weren't weird enough semselves, anime studio shaft mixed ist with lots and lots of weird artsy thingys. Just try to watch it, you will understand.
Black Lagoon - If you like action, Black Lagoon is definitly a musst-see. Its a about a bunch of mercenaries who lives in a crapsack city somewhere in thailand and doing jobs for and against the mafia. Lots of unrealistical, but cool action.
Jormungand + Perfect Order - At first its like Black Lagoon with less budget (well, the are set in the same world, just in different times and locations. There is even a small manga, where Koko meets the Lagoon Company). Its a anime about weapondealers who have to handle other weapondealers, the officials and american intelligence groups. Perfect Order goes farther and explores why our protagonist, the insane weapon dealer Koko is shooting hundreds of rockets into space.
 
Am I better off watching Kai than original DBZ?

If you could stand to watch something like Naruto Shippuuden and its horrible filler, then I'm sure you could get through original DBZ.

Kai is very close to the manga, better voice acting, however the show ended before it got to the last arc.

They're apparently making the last arc now but you'll be in for a wait, you'll have to go to original DBZ eventually if you want to see the entire show.
 
One Piece is the greatest long running anime of all time.
Too bad it's just that.. LONG. So many episodes.
Out of the Big 3 (Naruto, Bleach and One Piece) I enjoy One Piece the most.

Why would filler be a problem for any series? I just skip it.

You can't skip all the filler in DBZ. I'm pretty sure there is filler in episodes that aren't filler as well.

It's not just the trimming down though. Kai has a much better script and better voice acting if you are looking for the English version.

If you are interested in DBZ at all you should watch Dragon Ball first. DBZ is the sequel to that and it's much better in my opinion.

Hard to skip when it becomes intermixed with the canon.

Filler arcs are easy to skip yeah but you have canon that gets dragged out to hell and back because they need to stall for time and so the pacing gets fucked.

Baccano, Penguindrum, Durarara, Steins;Gate (might just want to play the game when it comes out, I hear it's superior)... Darker than Black is really slow but I like the first season. You might like Gundam Seed/00 and D.Grayman too.

Definitely check out Death Note. It's a pretty unique and captivating series. It has its issues, but it's well worth watching. One of the best anime OSTs out there as well.
 
My picks:

Ghost Hunt - Its one of those Ghost Hunting shows... except the ghosts are real. Its such a great concept I'm surprised no one ever did it before (at least in western media). It has a good cast of characters and a great creepy vibe without feeling disturbing or disgusting.

Hunter x Hunter - If you were going to pick one battle shonen series this would be my pick over One Piece and DBZ. It has the same features all these series have but its one of the best at presenting them.

Turn A Gundam - My favorite gundam series (of the ones I've seen anyway). Unfortunately it was never localized so you would need to track down fan subs. In this version Earth has very little technology left but there is an advance moon colony looking to return to the surface.

A Certain Scientific Railgun - If you can get past the dumb pedobait shit (very tame here by anime standards, but still present sadly) you have a great science fiction story about a group of middle school girls with super powers. Someone recommended A Certain Magical Index but I think railgun is much better although the two are partner series and take place concurrently
