I'm new to pokemon breeding and have a question that maybe some of you can answer.
It is regarding IVs.
So I started breeding larvesta. When the egg hatched, I put all the stats into the IV calculator at serebii. The calculator spit something like this out 15/15/30/15/15/14
Then I left this lvl1 larvesta at the daycare and picked it up at lvl 12.
This time the calculator showed me much higher IVs than at lvl1.
Does that mean the calculator can not show me precise IVs at lower levels?

This is correct. If you're using an IV calculator on newly hatched pokemon it is recommended that you take their stats at multiple levels.
If you're looking for 31s across the board then I find asking the ingame NPC quicker and easier. They're not great for more specific IVs though.

It will delete the key, you need to transfer the Key to another version and play challenge mode on that version.
Seriously Game Freak fuck up with making challenge mode lockable, version exclusive and dropping it.

What calculator were you using? A good one would give you a range of IVs if it didn't know what they were for sure. If you want to know exact IVs at level one there are a few ways to do it though.
Easiest way is to only breed for 31's. The IV checker in the Pokemon Center in the Battle Resort will tell you if any of your stats are perfect so you can keep breeding until you get 5 or 6 perfect IVs and just trash all the other Pokemon.
Another way is to save up about 30 or so Rare Candies. If you level up your Pokemon and enter the stats at every level into an IV calculator you should be able to figure out your IVs by level 30. After that you can reload an older save to keep your Rare Candies to use for the next Pokemon.

Regarding "Z", a few days ago, TV Tokyo suggested via an announcement for a TV event on December 24th that Ash's League battles will be broadcast during 2016. Not to jump into any conclusions, but that should mean the Kalos arc may be ending in 6 months or so, at least as far as the XY content is concerned.
The Z era is moving forward without a game announcement, and the XY media coverage seem to be close to being wrapped up. I suppose that there's little sense in speculating before the next CoroCoro, but it's still interesting to think what Kalos League being done by July/August could mean for the series moving forward.

Ending a league doesn't necessarily mean new gen. Remember Battle Frontier? Orange Islands? etc. Honestly I'd rather have those than that year of slog that happened in DP.

Not necessarily, and definitely not on its own, but the possibility is there. In any case, it's better to wait for CoroCoro before carrying on with this discussion.
Regarding the anime, I definitely agree that a Battle Frontier / Orange Islands-esque would be much better than dragging the remaining Kalos arc to infinity. I'd be partial to a return to Kanto, if only because the circumstances agree with it. Would be really cool to see a new Ash vs Gary battle. It's been a while since this happened...

Well, Gary has to pick up slack, he did quit to become a researcher instead.
And so far they don't want to drag Kalos since he will be getting his eight badge soon. I actually want the league to finish then head on to Flare, if only for having this "Ash was in the league" credentials on him. Hell, why not make him the Kalos champ while they're at it and have him solve Flare crisis!

Are the Pokemon X and Y games easy for newcomers to the Pokemon games?
Yes. They are probably the easiest games for a newcomer to get into. The first few hours really ease the player into how the game works.
Yes, very easy. less grinding as well thanks to EXP Share (though you'll likely be very overleveled by the end. Can make catching pokemon a pain without false swipe due to that though) allowing everyone to level up quite quickly and stuff.
I'd almost say too easy but it's fun regardless imo
Urgh, I was really hoping that they would have mini arc for the Sinnoh frontier brain but nope, gotta draaaaag out Ash getting his eight gym badge.
I love the Sinnoh arc but it really began to fall apart at the end as the writer tried to rush it for Best Wishes.

yeah, it's going to be very hard for any future traveling companion to match up to how enjoyable Serena and Bonnie has been.

And yo I decided to watch XY&Z and DAMN that opening episode was like a mini movie. I would loveee the anime if it was that pace and vibe all the time. I think the filler kills it for me, but I can't blame them. Its the nature of a series like that.

I am being to question myself why I redownloaded Pokémon Shuffle, the game is just get worse the further you go on.

The only Pokémon game I played in my life is Pokémon Red when I was 6. Now that I have a Wii U, are there any available via the Virtual Console or eShop? What game would you recommend I try next? I figured Gold/Silver was the sequel and introduced a ton of things, and I know all the new games Ruby/Sapphire, White/Black, and X/Y were well received.
I am just hoping that it will ease my disappointment with X and Y and gen 6 as a whole, though I am not holding out much hope.
Well Pokémon Red,Blue and Yellow will be released on the 3DS virtual console next year in February.
As for the next Pokémon game to try next you could try X and Y, it's designed to pander to people who grew up playing the gen 1 Pokémon game.
None on eShop and the only ones coming are Red/Blue/Yellow.
Jump in with the latest ones (Omega Ruby/Alpha Sapphire). If you really want to you can go back and play some of the older DS games, in which I would recommend HeartGold/SoulSilver as they're still sequels to the Kanto games and Black/White followed by Black 2/White 2 as those together are still solid entries and those titles are the only ones compatible with PokeBank, but it's always recommended to jump in with the latest entries as they have the most up to date features and that's what everyone else is playing.
X/Y isn't a bad choice either but it lacks some of the Pokémon variants introduced in Omega Ruby/Alpha Sapphire so that is something to keep in mind. Personally I'd avoid the hassle and get the latest one, then if they still hold your interest, go back and play some of the older titles on the DS (while accepting some limitiations such as the TM system in HeartGold/SoulSilver and Platinum if you want to play through a Sinnoh game).
I think the Wii U virtual console has Pokemon pinball for GBA, which I spent far more time then I should have with when I was younger. Nothing mainline on Wii U sadly though.
Again, there is way too much against there being the commencement of Generation 7 next year. All signs point to a new Kalos game and they'll just do a new filler saga based on something in there.
I'm just pointing out some of the signs that may suggest something other than a Kalos game is next, be it Gen 7 or otherwise. It's not to say there's no way around them (like a filler saga succeeding the XY&Z season), but it can't be denied that not quite all signs point to a Kalos/Zygarde game.

The fact there are 4 new Zygarde forms means signs point to a Zygarde game. No signs are pointing to anything else...
At this point I expect Zygrade to be announced for Pokken before Pokemon Z is announced. Something's taking longer. It's got to be at least a June 2016 game at this point. Probably later.
