Star Wars galaxy has millions of planets. One Jedi is not going to be noticed. Yoda and Ben were able to hide, why no others? This is also set years before ANH

Just because the inquisitor or others might exist, doesn't mean any of the officers have ever seen one in action or seen the force being used. Even in some EU materials they went into the same idea, how despite the Jedi during Clone Wars were so prevalent, few in their life would have ever seen the actual force in use. The SW universe is supposed to be massive in scale, majority of the people in said universe will never see a jedi or dark sider in their life, or see any evidence of the force in use.

This, plus the conversation doesn't really imply they believe the force doesn't exist, just that they think its "outdated" compared to Imperial technologies like the Death Star. If they had never or rarely seen it in use they wouldn't know what its real potential was, they might assume an odd force push or choke was the extent of its reach. Letsn ot also forget that despite the Emperor still using force agents, that doesn't mean he didn't simultaniously crank out a massive propaganda campaign to civilians (who the military is now made up of) teaching people that very ideology, that force users are essentially extinct and "bad", and to not trust people who think otherwise. The PT and cartoon don't really show it, but by the end of the Clone Wars most systems supposedly loathed Jedi and sith alike for basically propagating the war and tearing up their worlds. Don't forget Dooku, the sepretist leader, was formerly a Jedi, many people think that wasn't a coincidence (and it really wasn't, though the puppet master was not the Jedi council as was theorized).

Also, theres a lot of EU materiel that deals with rogue Jedi in the dark age. And its only logical. There were thousands of jedi spread across the galaxy, surely its reasonable more then just two of them fell through the cracks. Many of those still were hunted down and killed before ANH though, as that was basically Vader's job for those 20 odd years.

Well Star Wars was always aimed for kids after all.

No it isn't. Most of the movies and the cartoon were fairly balanced, aimed at everyone (although granted most of the humor in anything 21st century is pretty childish). Novels and DH comics are almost exclusively adult oriented though.
 
It's really mostly the same art style, except one that was hand-drawn for a show that was meant to be hand-drawn. As gorgeous as it was in 2D, it looks terrible in CG, and the show suffers for it.

No it doesn't. I thought the original 2d show looked bad at times. The first season of the Clone Wars had some some bad CG moments. But I felt from season two the quality just kept on getting better and better.
 
Looks better than I expected. The look stands more on it's own with the flowing plastic hair and animation than the pictures could transport before.

And with all the right guys in charge, I'll definitely keep an eye on this.
