Wario and Jigglypuff are excellent characters for this. Their high air speed combined with a fantastic set of aerials should get you used to the air. Wario's aerials are easier to land due to their long active hitbox but Puff stays in the air a lot longer. Try both out.
A Link main would have a good projectile game.
What's causing you to whiff? 'Landing aerials' is a really vague thing, and a lot of it just depends on how your opponent is moving; observe their habits, when they advance/retreat/shield etc. If it's a laggy aerial, make sure you autocancel it or use it off stage. If it's not, worry more about staying safe after it than always hitting them. In theory, I'm thinking it would help to space aerials just in front of opponents. Then it hits them if they come in, and if you place it right you're safe if they try to retaliate, and it might even scare them into retreating and giving you stage control. I'm not really sure that plan is smart right now though, since this game is pretty different from what I'm used to. I'm just kinda tossing out thoughts here, I'm not actually good enough to be giving advice lol.

Out of curiosity, does anyone know if it's possible for Villager to recover with both Gyroid Rocket (side B) and Balloon Trip (up B)? I played the demo on a friend's 3DS and was able to do both without having to touch the ground first, but someone else has claimed that Gyroid Rocket puts Villager into a freefall state.

Even still most of the time they can air dodge or fast fall or up b on reaction and beat your aerial attempt. And all that after you already have to sorta kinda guess if they're coming in high/low.I'm just really bad at hitting people midair with link/toon link. My air game suffers a lot as I can never land that last hit once i've hit them off the edge or way up into the air. I basically rely on ground smash attacks to KO.
I'll just practice some more, I guess. My timing is just way off.

It's as good as the game allowed me. It's closest to the cartridge quality you can get, which, sadly, isn't too high (20khz/100kbit).
I guess they had to reduce the filesize somehow.

Some things to try maybe, dunno if they'll work at all: with Link, jump to just above where you think they'll be, and fall with a nair. The nair might even end while they're dodging, and let you double jump into nair again, or letting you intercept them with up B.
With Link's dair, guess where they're going and double jump just before you input the aerial. I don't know the timing on the spike, but that should give you plenty of time to poke the move out there, and let you recover easily.
With T. Link, I would think just try your best to follow them and space fair/bair.
