I agree with everything you said, BUT, didn't Picard/Dr. Crusher went through the same dilemma? They both wanted to be with each other but couldn't because worked together? Fucking seriousley?) and characters that progress no where (Chakotay; "My people believe that the spirits Akuchimaya etc...I want to have sex with Janeway, but can't - damn protocol.") there are a TON of great individual episodes and some really epic two-parters, the series doesn't deserve half the flak it gets (especially when DS9 is so highly regarded).

Picking a bunch of DS9..etc characters makes you a TNG era fan NOT a real Star Trek fan imo. There is the TOS crew and then a bunch of wannabe's.

I'm still not sure I completely understand, but I've watched all the TOS episodes and I just like '90s science-fiction more (and the more modern stuff). There isn't any other science-fiction worth watching around the TOS era besides The Twilight Zone and Flash Gordon. That leaves movies: 2001 is my favorite movie so I don't know how that's not having artistic taste. the difference in his comparison is that getting all your sci fi knowledge through modern anime is less thorough and thought-provoking than the material it's based on, while the older sci-fi shows being defended are quite a bit less dense than their modern counterparts.

Modern-day science-fiction less thought-provoking and thorough than their predecessors? Of course I disagree with that.
