I can't remember if they did for G1 but if you miss out on the first evolution you get another chance for every level.

The lag is pretty good at preventing this, you'll notice a is still being pressed for a decent amount of time after the battle finishes.

The Rattata with Dig will come in handy as all ghosts in this game are weak to ground as Levitate didn't exist till Gen 3.
