This does indeed come down to regional accents, and how people have been brought up speaking certain words. I'm gonna wager I guess that you pronounce "pasta" and "kebab" like "pah-sta" and "ke-bahb" too. Again, a North American thing.

People fail when they say Po-kuh-mon too.
It's Po-Kay-mon. Even if you're ignorant of the Japanese origin of the pocket monsters portmanteau, they put an accent on the E to spell it out for you.

If you say it fast enough you might slur it into something like pokuhmon anyway (like Cleveland saying "turrble")... But if you are enunciating it its definitely pokaymon (as in the theme song).Dude. Even the narrator in the original US series said Pokuhmon. I always thought it was Po-Kay-Mon like you say but even official Pokemon things pronounce it like Po-Kuh-Mon.
